Freeze the salmon fillet for approximately 20 minutes to achieve firmness without solid freezing.

Slice the salmon lengthwise into 1/8-inch planks, then cut these into strips, and finally dice into 1/8-inch cubes.

Combine the diced salmon with lime juice in a small bowl.

In a larger bowl, whisk together the vegetable oil, sesame oil, and lime zest, then add the remaining ingredients and mix well.
