Salmon Stuffed Peppers

Instructions

  1. Preheat oven to 400 F.

  2. Boil peppers in salted water for 5 minutes, then drain.

  3. Combine onion, 1/2 cup breadcrumbs, egg, milk, salt, pepper, lemon juice, and salmon.

  4. Fill pepper shells with the salmon mixture.

  5. Mix melted butter with remaining breadcrumbs and Parmesan; sprinkle over stuffed peppers.

  6. Bake in a shallow dish for 15 minutes.
