Salmon Stuffed Peppers

Preheat oven to 400 F.

Boil peppers in salted water for 5 minutes, then drain.

Combine onion, 1/2 cup breadcrumbs, egg, milk, salt, pepper, lemon juice, and salmon.

Fill pepper shells with the salmon mixture.

Mix melted butter with remaining breadcrumbs and Parmesan; sprinkle over stuffed peppers.
