Instructions

  1. Combine salmon and cracker crumbs in a large bowl.

  2. In a heavy skillet, cook onion and red bell pepper in 1 tbsp olive oil over medium heat until tender.

  3. Add cooked vegetables, dill weed, egg, and lemon juice to the salmon mixture; mix.

  4. Form 4 patties; refrigerate if desired.

  5. Heat remaining olive oil and butter in the same skillet over medium heat.

  6. Cook patties 3-4 minutes per side until golden brown. Serve.
