Instructions

  1. Combine salmon with orange, lemon, and lime juices in a medium bowl.

  2. Refrigerate the salmon, covered, for 20 to 60 minutes.

  3. Drain the salmon, discard the marinade, and pat it dry.

  4. If not serving immediately, cover the salmon and refrigerate for up to one hour.

  5. Just before serving, mix soy sauce, mirin, onion, mango, jalapeños, and cilantro in a separate bowl.

  6. Pour this mixture over the salmon.

  7. Toss to coat and serve immediately with tortilla or plantain chips.
