Saeng Sun Jun: Korean Pan-Fried Fish
A crispy Korean pan-fried fish that pairs well with spicy dipping sauces or soy sauce.

Instructions

Heat a few teaspoons of oil in a pan over medium heat.

Cut fish diagonally into 1/2-inch thick pieces, then season all sides with salt and pepper.

Prepare two shallow bowls: one with flour, and another with beaten eggs (mixed with any remaining salt).

Dip each fish piece first into flour, then into the egg mixture, and immediately transfer to the hot pan.

Fry the fish for 1 to 3 minutes per side until golden-yellow, then remove and drain on paper towels before serving hot.
