Instructions

  1. Heat mustard oil in a large skillet over high heat, then add mustard, cumin, and fenugreek seeds; cook until they crackle.

  2. Stir in onions, ginger, and jalapeño, frying for 3-4 minutes.

  3. Add turmeric, coriander, and garam masala, cooking for one minute.

  4. Introduce cauliflower, tomatoes, bell peppers, green peas, and mushrooms to the skillet; reduce heat to medium-low and cook for 10-12 minutes until firm.

  5. Stir in spinach until wilted, then season with salt.
