S'Mores Doughnuts
S'mores doughnuts are prepared by filling classic fried doughnuts with marshmallow and topping them with chocolate glaze and graham cracker crumbs.

Instructions

Heat 3 inches of vegetable oil to 360 F in a saucepan with a deep-fry thermometer.

Combine flour, granulated sugar, and salt in a bowl.

In a separate bowl, combine warm water and yeast; let stand 10 minutes.

Add milk, egg, melted butter, and vanilla to the yeast mixture and beat.

Gradually beat in the flour mixture to form a soft, slightly sticky dough; knead for 5 minutes.

Transfer dough to a buttered bowl, cover, and let rise for 1 hour until doubled.

Roll dough to 1/4-inch thickness on a floured surface and cut out doughnuts with a 2 1/2-inch cutter; reroll scraps.

Arrange doughnuts on floured parchment, cover, and let rise 30 to 45 minutes until doubled.

Fry doughnuts in hot oil for 1 to 2 minutes per side until golden; transfer to a paper towel-lined rack to cool.

Fill a pastry bag with marshmallow and inject into the side of each doughnut.

In a saucepan over low heat, melt butter, milk, corn syrup, vanilla, and chocolate; stir until smooth.

Sift in confectioners' sugar and whisk until smooth; keep warm over hot water.

Dip the top of each doughnut into the chocolate glaze, place on a rack, and sprinkle with graham cracker crumbs.
