Instructions

  1. Preheat oven to 375 F and line baking sheets with parchment paper.

  2. In a large bowl, whisk together flour, graham cracker crumbs, baking powder, salt, and baking soda.

  3. In a separate bowl, beat butter, brown sugar, and granulated sugar until light and fluffy (about 3 minutes). Incorporate eggs one at a time, then add vanilla extract and beat for 2 minutes.

  4. Gradually mix the dry ingredients into the wet mixture until combined. Refrigerate the dough for at least one hour.

  5. Scoop dough onto prepared baking sheets, flatten slightly, and bake for 5 minutes.

  6. Remove cookies, increase oven temperature to 425 F. Press chocolate into each cookie, then top with a halved marshmallow.

  7. Return to oven and bake for an additional 5 minutes until marshmallows are lightly browned. Let cool on the baking sheet for 5 minutes before transferring to a wire rack. Serve when chocolate has set.
