S'mores Cookies
A s'mores-inspired cookie delivers the classic flavors of graham crackers, marshmallows, and chocolate in a convenient baked form.

Instructions

Preheat oven to 375 F and line baking sheets with parchment paper.

In a large bowl, whisk together flour, graham cracker crumbs, baking powder, salt, and baking soda.

In a separate bowl, beat butter, brown sugar, and granulated sugar until light and fluffy (about 3 minutes). Incorporate eggs one at a time, then add vanilla extract and beat for 2 minutes.

Gradually mix the dry ingredients into the wet mixture until combined. Refrigerate the dough for at least one hour.

Scoop dough onto prepared baking sheets, flatten slightly, and bake for 5 minutes.

Remove cookies, increase oven temperature to 425 F. Press chocolate into each cookie, then top with a halved marshmallow.

Return to oven and bake for an additional 5 minutes until marshmallows are lightly browned. Let cool on the baking sheet for 5 minutes before transferring to a wire rack. Serve when chocolate has set.
