Rustic Spanish Bread (Pan Rustico)
A simple five-ingredient bread recipe yields a rustic-style loaf, reminiscent of those found on a Spanish abuela's kitchen table.

Instructions

Whisk flour and salt in a medium bowl.

Activate yeast in a warm cup with 4 ounces of warm water.

In a large bowl, combine the yeast mixture and all but 1/2 cup of water. Gradually mix in the flour-salt mixture, adding remaining water as needed, until a smooth dough ball forms.

Oil a large bowl, place the dough inside, cover with a wet towel, and let rise in a warm spot for 30 minutes (or in a 150 F oven with the door open).

Flour a surface and your hands, then knead the dough until consistent.

Divide the kneaded dough into 3 pieces and shape into rounds or oblongs. Place on a baking sheet.

Preheat oven to 375 F (190 C). Let the shaped dough rise in a warm place for 10-15 minutes.

Cut slits into the tops of the loaves. Bake for 10 minutes, then remove, brush with beaten egg white, and bake for an additional 15-20 minutes until golden.

Cool on a rack for 10-15 minutes before slicing and serving.
