Russian/Ukrainian Pampushki Recipe
Pampushki are fried Russian and Ukrainian potato balls, filled with cheese, that can be served as an appetizer or main dish.

Instructions

Heat oil to 340 F in a deep fryer or heavy-bottomed saucepan.

Squeeze excess water from grated potatoes.

Combine grated and mashed potatoes with salt and pepper in a bowl.

In a separate bowl, mix cheese with chives or dill; add 1/4 teaspoon salt if using farmer's cheese.

Flatten an egg-sized portion of potato mixture into a circle; place 2 teaspoons of cheese mixture in the center.

Fold potato edges over the cheese, pinch to seal, and roll into a ball; repeat for all mixtures.

Dredge each ball sequentially in flour, beaten egg, and breadcrumbs.

Fry balls for 10 minutes until cooked, then drain on paper towels and serve hot.
