Russian Cabbage Soup (Shchi)

A flavorful fresh cabbage soup, known as shchi, is a traditional Russian dish featuring potatoes, carrots, celery, and tomatoes.

Instructions

  1. Melt 3 tablespoons unsalted butter in a large Dutch oven over medium heat, then sauté 1 coarsely chopped yellow onion until translucent.

  2. Add 1 shredded cabbage head, 1 grated carrot, and 1 coarsely chopped celery stalk; sauté for 3 minutes until vegetables begin to soften.

  3. Stir in 1 bay leaf and 8 cups vegetable stock or water. Bring to a boil, then reduce heat to low and simmer, covered, for 15 minutes until crisp-tender.

  4. Add 2 coarsely chopped russet potatoes. Bring to a boil, then reduce heat and simmer, covered, for 10 minutes until potatoes are tender.

  5. Incorporate 2 chopped tomatoes (fresh or undrained canned). Bring soup to a boil, then reduce heat and simmer, uncovered, for 5 minutes. Season with salt and pepper.

  6. Discard the bay leaf. Serve topped with fresh sour cream and dill.
