Russian Blini (Buckwheat Pancakes)

Instructions

  1. In a large bowl, whisk together buckwheat flour, all-purpose flour, salt, and instant yeast; then add warm milk and whisk until smooth.

  2. Cover the bowl and let the batter rise for 1 hour until doubled.

  3. Stir melted butter and an egg yolk into the batter. Whisk an egg white until stiff, then fold it into the batter.

  4. Cover and let the batter stand for 20 minutes.

  5. Heat butter in a large nonstick skillet over medium heat. Drop quarter-sized dollops of batter into the pan and cook for about 1 minute until bubbles form.

  6. Flip and cook for approximately 30 additional seconds. Transfer cooked blini to a plate, cover to keep warm, and repeat the process with the remaining batter.
