Russian Beef Stroganoff (Bef Stroganov)

Instructions

  1. Season beef tenderloin strips with salt and pepper.

  2. In a large saucepan, sauté onions in butter until translucent, then add mushrooms and cook for 2 minutes until softened.

  3. Add beef strips, sauté for 5 minutes, then stir in flour.

  4. Combine beef stock, dry mustard, and tomato paste; pour into the pan. Bring to a boil, reduce heat, and simmer for up to 15 minutes, or until beef reaches desired doneness.

  5. Temper sour cream with hot cooking liquid (and wine, if using). Stir the mixture back into the pan and heat until thickened.

  6. Adjust seasonings and serve with pan-fried potatoes, sliced pickles, and extra sour cream.
