Royal Icing Recipe to Decorate your Sugar Skulls

A vibrant, hard-drying icing is ideal for decorating Dia de Los Muertos sugar skulls.

Instructions

  1. Combine all ingredients in a mixing bowl; beat on high for 1-2 minutes. Scrape down the bowl sides, then beat for an additional 7-8 minutes.

  2. Transfer the mixed icing to an airtight container to prevent drying.

  3. Divide the icing into separate cups for each desired color. Incorporate paste food coloring, mixing thoroughly until streak-free.

  4. Fill pastry bags with each colored icing: hold the bag point-down, fold the top around your hand, spoon in the icing, then twist the top to seal.

  5. When ready to decorate, snip the tip off a pastry bag and apply icing directly to the sugar skull. Press additional decorations into the wet icing.

  6. Allow 30 minutes to an hour for the outer icing shell to dry, and up to 24 hours for complete solidification.
