Round Steak Parmesan With Tomato Sauce
A hearty steak Parmesan features breaded and browned beef baked in an Italian-style tomato sauce, topped with melted mozzarella cheese.

Preheat oven to 350°F.

Cut round steak into 4-6 pieces, then dredge in a mixture of flour, 1/2 teaspoon salt, and pepper, pounding to tenderize and flatten.

Prepare an egg wash by beating an egg with water in one bowl, and a breadcrumb-basil mixture in another.

Dip the flour-coated beef pieces first in the egg wash, then thoroughly coat them in the breadcrumb mixture.

Heat oil in a large skillet over medium-high heat, then brown the coated beef for 3-5 minutes per side.

Transfer the browned steak to a 2 1/2 to 3-quart baking dish.

In a bowl, combine tomatoes, tomato sauce, Parmesan, wine (if using), sugar, oregano, and 1/4 teaspoon salt; pour this sauce over the steaks.

Cover the dish tightly with foil and bake for 1 hour and 10 minutes, or until the meat is tender.

Sprinkle mozzarella over the meat, then continue baking uncovered for 5 minutes until the cheese melts.
