Rotisserie Prime Rib Roast
A delicious rotisserie prime rib roast is easily prepared for a fantastic meal.

Instructions

Combine oil, salt, dried thyme, onion powder, dried oregano, apple cider vinegar, pepper, dried tarragon, mustard powder, chili powder, and garlic in a small bowl.

Place prime rib on a cutting board, spread seasoning evenly, and let it rest at room temperature for 1-2 hours.

Prepare the grill for rotisserie cooking, removing grates if necessary.

Insert the rotisserie skewer through the roast's center and loosely secure with forks.

Mount the roast on the grill's rotisserie, center it, and tighten the forks.

Place a drip pan below the roast; briefly turn the rotisserie to check clearance and adjust if needed.

Remove roast and drip pan. Preheat the grill to 500-600 F (high).

Return roast to the hot grill with the drip pan beneath it.

Add 1 cup of water to the drip pan.

Cover grill, rotate on high for 20 minutes, then reduce to medium-low (300 F).

Continue cooking covered until internal temperature reaches at least 120 F (140 F for medium), approximately 1.5 hours, checking after 1 hour.

Remove roast from grill and rotisserie rod, cover with foil, and let rest for 15-20 minutes.

Place roast on a cutting board with bones pointed up.

Carve meat along the bones to remove in one piece.

Slice meat across the grain into 1/2 to 3/4-inch thick pieces and serve.
