Rose Jam

Instructions

Start boiling water or unsweetened juice with rose petals in a large saucepan over medium heat, stirring occasionally, and cook uncovered for 5 minutes.

Remove from heat, cover, and let stand for 10 minutes.

Stir in pectin, then bring to a full rolling boil, stirring constantly.

Add sugar and return to a full rolling boil, boiling hard for 1 minute while stirring constantly.

Remove from heat, quickly skim off any foam, and stir in lemon juice and rose water.

Pour into sanitized jars and allow to set.

Store refrigerated for up to one month.
