Line a deep-dish pie pan with pastry, then blind bake it for 15 minutes with parchment paper and dry beans, removing and cooling the crust for 10 minutes.

Melt butter in a skillet over low heat and cook onions for 20 minutes until tender. Increase heat to medium-high, add sugar, and sauté until golden brown; remove and cool slightly.

Layer caramelized onions and crumbled Roquefort onto the pastry. Whisk eggs, half-and-half, thyme, salt, and pepper.
