Rompope Mexican Eggnog

A rum-spiked milk drink, this rompope is Mexico's take on eggnog, combining egg yolks, almonds, and cinnamon for a delicious holiday beverage.

Instructions

  1. Process almonds into a paste.

  2. Simmer milk, sugar, and a cinnamon stick until sugar dissolves; do not boil. Remove from heat and let stand for 30 minutes.

  3. Whisk the almond paste into the milk mixture.

  4. Beat egg yolks until creamy, then slowly add the milk mixture while continuously stirring until incorporated.

  5. Return the mixture to low heat and stir constantly for 8 to 10 minutes, until it coats the back of a spoon.

  6. Cool completely, then add rum and stir before serving.
