Romanian Pork and Potato Stew

Instructions

  1. Start boiling water or stock in a small saucepan for the mamaliga; once boiling, add salt or Vegeta and butter, then gradually stir in cornmeal continuously.

  2. Simmer the cornmeal mixture over low heat for 35-40 minutes, stirring frequently, until it thickens and pulls from the pot sides; serve hot with optional additions like butter, cheese, herbs, or sour cream, or cool and pan-fry.

  3. For the stew, brown pork in lard, bacon grease, or oil in a large skillet or Dutch oven.

  4. Add onion and sauté until translucent, then cover the meat with water or stock, bring to a boil, and simmer until the pork is almost tender.

  5. Stir in tomato paste, Vegeta, paprika, salt, and pepper, then add the potatoes.

  6. Return the stew to a boil, adding more liquid if needed, then simmer until both pork and potatoes are tender.

  7. Remove from heat, stir in fresh dill or parsley, and serve the stew with the prepared mamaliga.
