Instructions

  1. Combine lamb and yogurt in a bowl; set aside to marinate.

  2. Heat oil in a deep pan over medium heat, then add whole spices (cinnamon, cardamom, cloves, bay leaves, peppercorns) and fry until slightly darker.

  3. Add onions and fry until lightly golden.

  4. Stir in ginger and garlic paste; fry for one minute.

  5. Add ground spices (chiles, garam masala, coriander, cumin, turmeric) and fry until oil separates from the mixture.

  6. Incorporate the lamb and yogurt mixture; fry thoroughly.

  7. Pour in beef stock and water, add salt to taste.

  8. Simmer, stirring frequently, until the gravy reduces and thickens.

  9. Whisk cream until smooth, then stir into the curry.

  10. Garnish with fresh coriander and serve.
