Roasted Whole Artichokes

A simple roasting technique yields tender and flavorful whole artichokes with concentrated taste.

Instructions

  1. Preheat oven to 425°F and prepare 4 large squares of heavy-duty foil.

  2. Trim artichoke stems flush with the base and cut 1 inch off the top; rub with lemon to prevent discoloration.

  3. Rub foil pieces with olive oil, place an artichoke stem-side down on each, then insert a garlic clove into the center of each.

  4. Sprinkle each with 1/4 teaspoon salt, drizzle with 1 tablespoon olive oil, and squeeze half a lemon over each.

  5. Tightly seal each artichoke in its foil.

  6. Place foil-wrapped artichokes in a roasting pan and bake for 90 minutes.

  7. Rest for 20 minutes before unwrapping and serving hot, or allow to cool.
