Roasted Turkey Recipe
A roasted turkey recipe suitable for Thanksgiving or any special occasion, complete with instructions for a savory homemade gravy.

Preheat oven to 325 F.

If frozen, defrost turkey in its wrapping in the refrigerator for approximately 24 hours per 4-5 pounds.

Once defrosted, unwrap the turkey, place it on a baking sheet, remove giblets and neck from the cavity (discard or save), and pat the turkey dry.

Place turkey on a rack in a roasting pan, tucking wing tips under.

Rub skin with oil, season skin and cavity with salt and pepper. Place herbs, lemon, and onion in the cavity, and add stock to the roasting pan.

Roast at 325 F for approximately 15 minutes per pound until skin is golden; tent with foil if over-browning. Confirm internal temperature reaches 175 F in the thigh and 160 F in the breast.

Let turkey rest 20-30 minutes while preparing gravy.

Strain pan drippings, discard solids, and reserve 3 cups; supplement with broth if needed.

Melt 5 tbsp butter in a saucepan over medium heat, whisk in 5 tbsp flour, and cook for 2 minutes.

Gradually whisk in reserved drippings. Simmer, whisking constantly for 5 minutes until thickened, then season.
