Instructions

  1. Preheat the oven to 325 F with a rack in the center.

  2. Core and cut tomatoes into 1-inch pieces, leaving smaller varieties whole.

  3. Toss the cut tomatoes with oil, garlic, onion, Italian seasoning, salt, and pepper in a large bowl.

  4. Arrange the seasoned tomatoes in a single layer on a baking sheet and roast for about one hour until tender and shriveled.

  5. Pass the roasted tomatoes through a food mill or blend them to achieve a smooth sauce, removing skins and seeds.

  6. Transfer the tomato mixture to a large saucepan, adding basil, tomato paste, and red pepper flakes if using.

  7. Bring the sauce to a simmer over medium heat, then reduce to low and continue to simmer for about 10 minutes until slightly thickened.

  8. If serving, prepare pasta according to package directions and toss the hot, drained pasta with the finished sauce.
