Roasted Sweet Potatoes and Beets (Parve, Passover)

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Toss beets with 1 tablespoon olive oil, then spread on a parchment-lined baking sheet and bake for 15 minutes.

  3. While beets bake, combine remaining 2 tablespoons olive oil with garlic powder, salt, and pepper.

  4. In a large bowl, mix sweet potatoes, potatoes, onions, and garlic with the seasoned oil mixture.

  5. Remove beets from oven, add the sweet potato mixture to the pan, and continue baking for 45 minutes, stirring after 20 minutes, until all vegetables are tender.
