Instructions

  1. Preheat the oven to 350 F (180 C).

  2. Lightly oil a baking dish, then add chopped carrots, celery, and sliced onion.

  3. Pat the turkey breast dry, place it skin-side up on the vegetables, then rub with melted butter and Cajun seasoning; sprinkle with salt and pepper.

  4. Roast for 1 to 1.5 hours, or until internal temperature reaches 165 F; allow to rest for 10 minutes before carving.
