Roasted Rhubarb and Vanilla Crumble

Instructions

  1. Preheat oven to 350 F. Cut rhubarb into 1-inch pieces and place in an ovenproof dish.

  2. Sprinkle brown sugar over the rhubarb.

  3. Mix vanilla extract with orange juice, then pour over the rhubarb.

  4. Loosely cover the dish with foil and bake for 15 minutes, until rhubarb is cooked but not falling apart.

  5. Remove from oven and let cool.

  6. Combine butter, flour, and brown sugar in a bowl and mash to form lumpy crumbs.

  7. Refrigerate crumble mix for 5 to 10 minutes.

  8. Sprinkle crumble over the cooled rhubarb.

  9. Return to oven and bake for 30 to 35 minutes, until golden brown.

  10. Serve hot with custard or vanilla ice cream.
