Roasted Red Peppers in Oil, Vinegar, and Garlic

Instructions

  1. If using bell peppers, deseed and cut them into four pieces, then arrange on a lipped plate. If using piquillo peppers, drain and arrange them whole on a lipped plate.

  2. Mince garlic.

  3. In a small bowl, whisk minced garlic with a few tablespoons each of vinegar and oil.

  4. Pour the whisked mixture over the arranged peppers.

  5. Serve with rustic bread or as a meal accompaniment.
