Roasted Potatoes With Ham

A versatile roasted potato and ham dish makes excellent use of leftover baked ham for breakfast, brunch, or dinner.

Instructions

  1. Preheat oven to 400 F.

  2. Heat 3 tablespoons of fat in a large skillet over medium-high heat. Cook potato slices, stirring often, until lightly browned and partially cooked, then transfer to a large bowl.

  3. Add ham and onion to the skillet; cook, stirring, until onions are translucent and ham begins to brown, adding more fat if needed.

  4. Stir in garlic and cook for 1 minute.

  5. Lightly grease a 2 1/2- to 3-quart baking dish. Add the ham and onion mixture to the potatoes, then sprinkle with parsley, salt, and pepper and toss to combine.

  6. Transfer the mixture to the prepared baking dish.

  7. Bake for about 20 minutes, or until potatoes are tender and browned.
