Roasted Potatoes With Basil, Thyme, and Garlic

Instructions

  1. Preheat the oven to 400 F.

  2. Scrub, peel, and cut potatoes into 1-inch chunks, then microwave them with 1/2 cup water in a covered, vented dish on high for 4 minutes.

  3. Drain the potatoes, spread them on a cookie sheet, and let cool until dry for 20 to 30 minutes.

  4. Pour olive oil into a heavy roasting pan, then add the cooled potatoes, onions, garlic, salt, pepper, basil, and thyme, tossing to coat.

  5. Roast for 30 to 40 minutes, turning once, until tender inside and crisp with browning outside.

  6. Serve immediately.
