Instructions

  1. Preheat the oven to 400 F. Line a large baking pan with foil and spray with nonstick cooking spray.

  2. Cook bacon in a skillet over medium-low heat until browned, then remove, drain, and crumble or dice. Set aside.

  3. Scrub and cut potatoes into 1-inch pieces; peel and thinly slice the onion.

  4. In a large bowl, combine potatoes, sliced onion, oil, salt, pepper, and thyme, tossing to coat.

  5. Spread the potato mixture evenly on the prepared baking sheet and roast, turning occasionally, for 35 to 45 minutes.

  6. Add the reserved bacon to the pan and continue roasting for approximately 15 minutes, until potatoes are tender and browned.
