Roasted Pork Loin With Stuffing

Instructions

Preheat the oven to 350 F and lightly oil a rimmed roasting pan.

Butterfly the pork roast if not already done, then cover with plastic wrap and pound to an even 3/4-inch thickness.

Combine stuffing mix and melted butter in a bowl, then stir in onion, celery, pecans, thyme, salt, and pepper.

Remove plastic from pork, season generously with salt and pepper, then spread stuffing evenly and roll tightly from a short end.

Secure the rolled roast with skewers or twine, place on the prepared pan, and sprinkle with salt and pepper.

Roast for 1.5 to 2 hours, or until internal temperature reaches 145 F.

Let roast rest for 10 minutes before slicing.
