Roasted Peppers in Oil Recipe

Roasted peppers with garlic, oil, and vinegar is a simple side dish prepared by charring, peeling, and marinating peppers.

Instructions

  1. Preheat oven to 400F, preheat a broiler, or preheat a grill to medium-high; line a baking sheet with foil if using an oven.

  2. Roast, broil, or grill peppers for 10-25 minutes, rotating until all sides are blistered and blackened.

  3. Transfer charred peppers to a covered bowl or sealed bag and steam for 15 minutes, or until cool enough to handle.

  4. Remove stems, skins, seeds, and membranes from cooled peppers; rinse if necessary.

  5. Place cleaned peppers in a serving bowl, then add oil, vinegar, garlic, salt, and pepper.

  6. Toss thoroughly and marinate at room temperature for 30 minutes before serving or refrigerating.
