Preheat oven to 375 F.

Trim and peel kohlrabi completely.

Cut peeled kohlrabi into even wedges or chunks.

Place kohlrabi in a roasting pan, drizzle with olive oil, toss, and sprinkle with salt to taste.

Roast for about 30 minutes, or until tender and browned on the edges. Serve hot.
