Roasted Garlic Mashed Potatoes Recipe

Instructions

  1. Preheat oven to 400°F.

  2. Slice 1/2 inch off the top of each garlic head, keeping roots intact and removing most papery skin.

  3. Place garlic on foil, drizzle with olive oil, wrap, and bake on a baking sheet for 50-60 minutes until tender and browned. Let cool.

  4. While garlic bakes, scrub, peel (optional), and cut potatoes into chunks.

  5. Place potato chunks in a saucepan, cover with water by 1 inch, and add 1 tablespoon salt.

  6. Bring to a boil over high heat, then reduce to medium-low, cover, and cook for about 25 minutes until tender. Drain well.

  7. Meanwhile, heat milk and butter in a saucepan over low heat until butter melts.

  8. Transfer drained potatoes to a large bowl, add the hot milk and butter mixture, and mash until smooth.

  9. Squeeze garlic cloves into a bowl, mash until smooth, then add to potatoes and blend well.

  10. Season with salt and pepper to taste; add extra milk or cream for a looser consistency.

  11. Serve garnished with chives or parsley.
