Instructions
-
Preheat oven to 400°F.
-
Slice 1/2 inch off the top of each garlic head, keeping roots intact and removing most papery skin.
-
Place garlic on foil, drizzle with olive oil, wrap, and bake on a baking sheet for 50-60 minutes until tender and browned. Let cool.
-
While garlic bakes, scrub, peel (optional), and cut potatoes into chunks.
-
Place potato chunks in a saucepan, cover with water by 1 inch, and add 1 tablespoon salt.
-
Bring to a boil over high heat, then reduce to medium-low, cover, and cook for about 25 minutes until tender. Drain well.
-
Meanwhile, heat milk and butter in a saucepan over low heat until butter melts.
-
Transfer drained potatoes to a large bowl, add the hot milk and butter mixture, and mash until smooth.
-
Squeeze garlic cloves into a bowl, mash until smooth, then add to potatoes and blend well.
-
Season with salt and pepper to taste; add extra milk or cream for a looser consistency.
-
Serve garnished with chives or parsley.
