Roasted Garlic Aioli

Instructions

  1. Preheat the oven to 375 F. Prepare garlic heads by removing loose peels and snipping clove tips, then drizzle with 1 tablespoon olive oil on aluminum foil.

  2. Seal the garlic in foil and roast for about 45 minutes until very tender; let cool.

  3. Squeeze or spoon out roasted garlic cloves and mash them into a paste.

  4. For the blender method: Combine the mashed garlic, egg, lemon juice, mustard, and salt in a blender. While blending on low, slowly stream in the remaining olive oil until emulsified and thick.

  5. For the whisk method: Whisk the mashed garlic, egg, lemon juice, mustard, and salt in a bowl. While continuously whisking, slowly add the remaining olive oil until emulsified and thick.

  6. Season the aioli with salt and pepper, adding more lemon juice to thin if desired. Serve immediately or refrigerate for up to two days.
