Roasted Game Hens With Potatoes and Carrots

Flavorful Cornish game hens, roasted alongside potatoes, carrots, and herbs, create a complete and easily scalable meal for two.

Instructions

  1. Preheat oven to 375 F.

  2. Melt butter and olive oil in a skillet over low heat, add minced garlic and herbs, then set aside 1 1/2 to 2 tablespoons of the mixture.

  3. Add onion, potatoes, and carrots to the skillet, season with salt and pepper, toss to coat with the remaining butter-herb mixture, and cook for 2 minutes.

  4. Season hen cavities with salt and pepper. Rub hens with the reserved herb mixture; optionally stuff cavities with lemon, onion, and herb sprigs.

  5. Transfer vegetables to a baking dish if your skillet is not oven safe.

  6. Arrange hens on the vegetables and roast for about 1 hour 15 minutes, or until hens reach 165 F in the thigh.

  7. Cover hens with foil if browning too quickly, or broil for 2-3 minutes if more browning is desired.
