Roasted Fuyu Persimmons

Preheat the oven to 375 F.

Remove persimmon tops and bottoms, then peel if preferred, and slice them 1/4 to 1/2 inch thick.

Arrange slices in a single layer on a parchment-lined baking sheet, drizzling each side with oil.

Roast for approximately 20 minutes until tender and edges begin to brown.

Season with salt to taste and optionally grate about 1/4 teaspoon of citrus zest over them.
