Instructions

  1. Preheat the oven to 375 F.

  2. Remove persimmon tops and bottoms, then peel if preferred, and slice them 1/4 to 1/2 inch thick.

  3. Arrange slices in a single layer on a parchment-lined baking sheet, drizzling each side with oil.

  4. Roast for approximately 20 minutes until tender and edges begin to brown.

  5. Season with salt to taste and optionally grate about 1/4 teaspoon of citrus zest over them.
