Instructions

  1. Preheat the oven to 425 F.

  2. Slip 1-2 basil leaves under the loosened skin of each thigh and season with salt and pepper.

  3. Heat an ovenproof skillet over medium heat. Sear chicken thighs skin-side down for 5 minutes until crisp, then flip and transfer the skillet to the oven.

  4. Roast for 25 minutes, or until chicken reaches an internal temperature of 165 F.

  5. Serve warm, garnished with chives.
