Roasted Chicken Breasts With Potatoes and Leeks
Succulent roasted chicken breasts are prepared with tender potatoes, leeks, garlic, and basil for a complete meal.

Preheat oven to 400 F (200 C). Lightly spray a large baking pan.

Place chicken breasts in the pan. Combine oil, garlic, and basil; brush some over the chicken.

Trim, wash, and slice leeks into 1/2-inch pieces. Peel and cut potatoes into 1 1/2-inch chunks.

Toss leeks and potatoes with the remaining oil mixture. Arrange them around the chicken in the pan. Season with salt and pepper.

Roast for 30 to 45 minutes, until chicken is cooked through (165 F) and potatoes are tender.
