Instructions

  1. Preheat oven to 400°F.

  2. Melt butter in an ovenproof skillet over medium-high heat, then sauté potatoes for 5 minutes.

  3. Roast potatoes in the oven for 20 minutes, tossing occasionally.

  4. Remove from oven, sprinkle with parsley, salt, and pepper, then serve immediately.
