Roasted Celery Root

Instructions

  1. Preheat the oven to 400 F.

  2. Carefully peel the celery root, cutting it in half for stability before slicing into 1/2-inch by 1-inch pieces.

  3. To cook with olive oil: Place slices in a bowl, drizzle with olive oil, and stir to coat. Spread on a baking tray, season with salt and pepper, then roast for 30 minutes until crisp and golden.

  4. To cook with duck or goose fat: Place fat in a roasting dish and heat in the oven for 5 minutes. Toss celery root slices with salt and pepper, add to the hot fat, and gently shake the pan to coat. Roast for 30 minutes until golden brown, checking and turning after 15 minutes if needed.

  5. Remove from oven and serve immediately.
