Preheat the oven to 425 F.

Toss cauliflower florets with oil, turmeric, and cumin on a baking sheet; spread and season with salt and pepper.

Roast for approximately 20 minutes, flipping once, until crisp-tender and browned.

Concurrently, soak sliced red onion in cool water for 20 minutes, then drain thoroughly.

Combine the hot roasted cauliflower with lemon juice and honey, then let cool briefly.

In a large bowl, mix the cooled cauliflower with the drained red onion, pomegranate seeds, parsley, and pistachios.
