Place 12 ounces cleaned and halved baby bok choy on a baking sheet; drizzle with 2 tablespoons olive oil and pepper.

Whisk together 1 teaspoon sesame oil, 1 tablespoon soy sauce, 1 teaspoon red wine vinegar, and 1 teaspoon sugar in a small bowl to create the dressing.
