Instructions

  1. Preheat the oven to 400 F.

  2. Place 12 ounces cleaned and halved baby bok choy on a baking sheet; drizzle with 2 tablespoons olive oil and pepper.

  3. Bake for 6 to 8 minutes until tender.

  4. Whisk together 1 teaspoon sesame oil, 1 tablespoon soy sauce, 1 teaspoon red wine vinegar, and 1 teaspoon sugar in a small bowl to create the dressing.

  5. Transfer bok choy to a serving dish, spoon the dressing over it, and sprinkle with toasted sesame seeds.
