Roasted Baked Potato Slices

Instructions

  1. Preheat the oven to 400 F (200 C).

  2. Scrub and dry baking potatoes, then rub them with olive oil, prick in several places, and optionally sprinkle with salt.

  3. Bake potatoes directly on the oven rack for 40 to 45 minutes until tender, then remove and cool completely.

  4. Increase oven temperature to 425 F (220 C) and prepare a large, foil-lined baking sheet with nonstick spray.

  5. Slice the cooled potatoes into 1/8 to 1/4 inch thick rounds.

  6. Drizzle potato slices with melted butter or oil, toss to coat, then spread on the prepared baking sheet and season lightly with salt, pepper, and optional garlic powder.

  7. Roast for 15 to 20 minutes, turning every 4 to 5 minutes, until tender and lightly browned.
