Roast Pork Loin With Sweet Potatoes and Apples

Instructions

  1. Preheat the oven to 375 F.

  2. In a large Dutch oven, brown the pork roast in hot vegetable oil for about 6 minutes, turning to brown all sides, then remove from heat.

  3. Combine honey, orange juice, apple juice concentrate, pepper, and brown sugar, then spoon this mixture over the pork.

  4. Arrange sweet potatoes around the pork.

  5. Cover and bake for 2 hours, or until the pork reaches 145 F.

  6. Place apple quarters around the pork, then bake uncovered for 20 minutes, basting frequently, until the apples are tender.

  7. Let the pork stand for 10 minutes before slicing and serving with the sweet potatoes and apples.
