Roast Pork Loin With Apricot Sauce

Instructions

  1. Preheat the oven to 325 F.

  2. Combine 1/2 cup chicken broth, soy sauce, minced garlic, dry mustard, thyme, and ginger. Add the pork roast, coat well, and refrigerate for 4 hours, turning occasionally.

  3. Remove the pork roast and discard the marinade.

  4. Place the pork roast, fat-side up, on a rack in a foil-lined roasting pan.

  5. Bake for 1 1/2 to 2 hours, or until a meat thermometer registers 145 F.

  6. Remove the roast, tent loosely with foil, and let it stand for 15 minutes.

  7. Meanwhile, combine preserves, 2 tablespoons chicken broth or sherry, and 1 tablespoon soy sauce in a saucepan over medium heat.

  8. Bring the sauce to a boil, then reduce heat to low and simmer for 1 minute.

  9. Slice the pork loin thinly and serve with the apricot sauce.
