Roast Leg of Lamb Recipe

Instructions

  1. Preheat oven to 450 F.

  2. Mix all ingredients except olive oil and salt to form the marinade.

  3. Rub the leg of lamb with the marinade, then bag and refrigerate for a minimum of 6 hours or overnight.

  4. Remove lamb from the refrigerator 45 minutes prior to cooking to reach room temperature.

  5. Transfer lamb from marinade to a rack in a roasting pan, fat-side up. Rub with olive oil and generously season with salt.

  6. Roast for 15 minutes at 450 F, then reduce oven temperature to 315 F.

  7. Continue roasting for about 10 minutes per pound until internal temperature reaches 135 F.

  8. Rest the lamb for at least 20 minutes before slicing thinly against the grain.
