Roast Beef With Garlic and Thyme Recipe

Instructions

  1. Preheat the oven to 450 F.

  2. Combine butter, lemon peel, thyme, salt, and pepper in a bowl; then rub garlic halves and the butter mixture over the beef.

  3. Place the seasoned beef on a rack in a shallow roasting pan and roast at 450 F for 10 minutes.

  4. Reduce oven temperature to 325 F and continue roasting for 1 to 1.5 hours, or until the internal temperature reaches 145 F.

  5. Remove the roast from the oven, cover loosely with foil, and let it stand for 10 minutes before slicing.

  6. Slice the roast, arrange on a serving dish with onion and tomato slices, and serve immediately.
