Rich and Creamy Baked Macaroni and Cheese

Instructions

Preheat the oven to 375 F and grease a 2 1/2-quart baking dish.

Cook macaroni as directed, then drain and rinse.

In a saucepan over medium-low heat, melt butter; stir in paprika, mustard, salt, and pepper.

Stir in flour until smooth, then add milk and cook until thickened.

Whisk 1 cup of sauce into beaten egg yolk, then return mixture to sauce and blend.

Reserve 1 cup shredded cheese; add remaining cheese to sauce and stir until melted.

Stir in macaroni, transfer to baking dish, and top with reserved cheese.

Toss bread crumbs with melted butter; sprinkle over the cheese layer.

Bake for 25 to 30 minutes until browned and bubbly.
